Ingredients you'll need

  • 2 kohlrabi
  • 2 tbsp olive oil
  • 1 tsp maple syrup
  • 1 tsp soy sauce
  • 1 tsp paprika
  • salt and pepper
  • 65g vegan butter
  • 1 shallot
  • handful chopped parsley
  • zest and juice of 1 lemon
  • 1 tsp miso paste
  • 60ml water
  • 1 tsp maple syrup
  • Let's get cookin'

    1. Peel kohlrabi, cut in steaks and score them
    2. Mix oil, maple syrup, soy sauce, paprika, salt and pepper, brush steaks
    3. Bake at 200C/400F for 25mins, flip and bake 20mins more
    4. Fry shallot in vegan butter add parsley, lemon, diluted miso and maple syrup
    5. Let bubble and serve over steaks.
