Ingredients you'll need

  • 60ml lukewarm water
  • 1 tsp instant yeast
  • 1/2 tsp salt
  • 1 tsp olive oil
  • 90g flour
  • olive oil for coating
  • Let's get cookin'

    1. Mix water, yeast, salt and oil
    2. Stir in flour until shaggy dough forms
    3. Cover and rest 30mins
    4. Stretch and fold 4 times total resting 30mins each time
    5. Oil baking dish and focaccia generously
    6. Rest 30mins while preheating oven
    7. Create signature focaccia dimples and bake at 200C/400F for 20mins until golden.

In just three hours, a few ingredients create a crispy, airy focaccia for one person. The secret lies in the stretch-and-fold technique: The dough is stretched and folded every 30 minutes, allowing the gluten to develop and creating the typical, airy texture. The high oil content makes the bread crispy on the outside and moist on the inside. The characteristic indentations are created by finger pressure before baking – this allows the olive oil to collect in small puddles and caramelize slightly. Perfect for sandwiches, as a side dish to soup, or simply on its own with good olive oil. Fresh bread for singles has never been easier! 🌿
