Ingredients you'll need

  • 1 onion
  • 2 cloves garlic
  • thumbsize piece ginger
  • 1/2 chili (optional)
  • 2 bunches cilantro
  • 1/2 can (200ml) coconut milk
  • pinch salt and sugar
  • 2 tsp soy sauce
  • juice of 1 lime
  • 150g frozen spinach
  • 1 can (220g) cooked chickpeas
  • rice or naan
  • Let's get cookin'

    1. Roughly chop onion, garlic ginger, and optional: chili
    2. Sauté 3-4mins, transfer to blender
    3. Add cilantro, coconut milk, salt, sugar, soy sauce, lime juice and spinach
    4. Blend until smooth
    5. Add chickpeas to pan with green sauce and simmer 10-15mins
    6. Serve with rice or naan.
