Ingredients you'll need

  • 200g tofu
  • 1 onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 cup of rice
  • 2 cups water
  • Olive oil to fry
  • Salt to taste


Spice mix:

  • 1/4 Tsp ground saffron
  • 1 Tsp smoked paprika
  • 1 Tsp dried oregano

Let's get cookin'

  1. Chop onion, garlic and bell pepper and cut the tofu in triangles.
  2. Heat up oil in a pan and fry the tofu until golden brown, then remove from the pan.
  3. Add a bit more oil and sauté onion, garlic and bell pepper until softened.
  4. Add the rice and toast for around 5mins before adding the spices for another 1-2 mins.
  5. Now gradually add the water, stir and cover on medium heat. Let it simmer until the water has
    been absorbed and repeat the step until the rice is tender.
  6. Place the tofu on the paella and serve with fresh lemon juice
