Ingredients you'll need

For the cabbage

  • 1 small pointed cabbage.

For the tahini sauce

  • 1/2 bunch cilantro
  • 1/2 bunch dill (or more cilantro)
  • 1/2 green chili (optional)
  • 5 tbsp tahini
  • 3 tsp maple syrup or agave
  • Juice of 1 lemon
  • Salt to taste
  • 1/2 tsp garlic powder
  • 2 tbsp water. For serving Dukkah (optional)

Let's get cookin'

  1. Cut pointed cabbage into quarters
  2. Heat a large pan and fry cabbage quarters on each side until nicely charred
  3. Add a few splashes of water, cover, and steam on medium heat for 10-15 minutes
  4. For sauce: blend cilantro, dill, green chili, tahini, maple syrup, lemon juice, salt, garlic powder, and water until smooth
  5. Serve cabbage with tahini sauce and optional dukkah
