Ingredients you'll need

For the carrot lox:

  • 3 carrots

For the Marinade:

  • 2 Tbsp Oil
  • Juice of 1 lemon
  • 2 Tbsp white wine vinegar
  • Salt to taste
  • 1 tsp smoked paprika

For one sandwich:

  • 100g Tofu Rosso
  • 1 Tbsp Green Pesto
  • a good handful of arugula
  • 2 slices of bread

Let's get cookin'

  1. Peel the carrots and slice them. Then boil them in salted water for about 10 minutes.
  2. Meanwhile, mix all the ingredients for the marinade and add the cooked carrots to it. 20 minutes is enough, but they’ll taste best if you let them marinate overnight.
  3. For the sandwich, spread pesto on both slices of bread and layer the tofu, arugula, and carrot salmon on top.
  4. Close the sandwich and enjoy.
