Ingredients you'll need

  • 1 onion
  • 200g mushrooms
  • 400g black beans or kidney beans rinsed
  • 90g breadcrumbs
  • 1 tsp each salt paprika cumin
  • 1/2 tsp each garlic powder chili powder
  • 1/2 cup (125g) vegan mayo
  • 3 tbsp ketchup
  • 2 tbsp chopped pickles
  • 1 1/2 tsp sugar
  • 1 1/2 tsp white vinegar
  • burger buns
  • caramelised leek
  • Let's get cookin'

    1. Roast onion and mushrooms on high heat until charred (10mins)
    2. Pulse with beans
    3. Add breadcrumbs and spices, knead until firm
    4. Take handful, roll into ball, place in hot oil, press down, fry 2-3mins each side
    5. For sauce: mix mayo, ketchup, pickles, sugar and vinegar
    6. Serve with buns and caramelised leek.
