Ingredients you'll need

For the crispy rice

  • 2 1/2 cups cooked basmati rice
  • 2 tbsp Thai red curry paste
  • 3 tsp oil

For the dressing

  • 2 tbsp light soy sauce or vegan fish sauce
  • 1 chili, finely chopped
  • 2 cloves garlic, minced
  • juice of 1/2 lime
  • 2 tbsp sugar
  • 1/4 cup (60ml) water

For assembly

  • a bunch of fresh mint and parsley/cilantro
  • 1 cucumber, smashed and chopped
  • toasted coconut flakes
  • toasted peanuts
  • fried shallots
  • lettuce leaves for wrapping

Let's get cookin'

  1. Preheat oven to 200°C/400°F.
  2. In a bowl, mix cooked basmati rice with Thai red curry paste and oil until well combined.
  3. Spread the rice mixture on a baking sheet in an even layer.
  4. Bake for 30 minutes, stirring halfway through, until rice is crispy and golden.
  5. While rice is baking, prepare the dressing by mixing soy sauce, chopped chili, minced garlic, lime juice, sugar, and water until sugar dissolves.
  6. Prepare fresh herbs by roughly chopping mint and parsley/cilantro.
  7. Smash cucumber lightly and chop into bite-sized pieces.
  8. Toast coconut flakes and peanuts if not already toasted.
  9. Once rice is crispy, let it cool slightly.
  10. In a large bowl, combine crispy rice, fresh herbs, cucumber, toasted coconut flakes, peanuts, and fried shallots.
  11. Pour dressing over the salad and toss to combine.
  12. Serve immediately in lettuce wraps for the authentic experience.
