Caramelized Onions

  • 1 large onion, thinly sliced

Patties

  • 1 can (220 g) black beans or kidney beans, drained and rinsed
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • 1 tsp dried oregano
  • 2 tbsp soy sauce
  • 5 tbsp breadcrumbs or chickpea flour
  • 3–4 tbsp water (if needed)

Sauce

  • 6 tbsp vegan mayonnaise
  • 2 tbsp ketchup
  • 1 tsp mustard
  • 1 tsp chopped pickles
  • Salt to taste

To Serve

  • Burger buns
  • Oil for frying

  1. Heat a pan over medium heat with some oil. Add the sliced onion and cook, stirring occasionally, until brown and caramelized. Add a pinch of sugar if desired. Set aside.
  2. In a bowl, mash the beans with a fork until chunky.
  3. Add cumin, smoked paprika, oregano, soy sauce, and breadcrumbs or chickpea flour. Mix well.
  4. If the mixture feels too dry, add water 1 tablespoon at a time until it holds together.
  5. Refrigerate the mixture while preparing the sauce.
  6. In a small bowl, mix vegan mayonnaise, ketchup, mustard, chopped pickles, and salt to taste.
  7. Shape the bean mixture into 3 large patties.
  8. Heat oil in a pan and fry the patties until golden brown on both sides.
  9. Assemble the burgers with buns, patties, caramelized onions, and sauce.
  10. Serve immediately and enjoy.
