Ingredients you'll need

For roasting 5 onions

  • 1 whole head garlic
  • 1 tsp thyme
  • Salt to taste
  • Olive oil
  • 50ml white wine (optional).

For the pasta

  • 200g pasta
  • 50ml vegan cream
  • Reserved pasta water

Let's get cookin'

  1. Preheat oven to 180°C/360°F
  2. Combine whole onions, whole garlic head, thyme, salt, olive oil, and optional white wine in baking tray
  3. Roast for 50 minutes until very soft and caramelized
  4. Cook pasta al dente and add to the roasted onions and garlic
  5. Add vegan cream and some reserved pasta water
  6. Stir until all pasta is coated in the sauce
  7. Serve immediately (and maybe have some mints ready!)
