We’ve got a few monster zucchini in our garden so I had to find nice ways to prepare them…😌 Delicious crispy baked zucchini fries made with a seasoned batter and breadcrumb coating. Perfect for using up large garden zucchini, these fries are a healthier alternative to traditional fries and can be served with an optional spicy mayo dip.

Ingredients you'll need

For the Batter:

  • 1 cup (120g) flour (chickpea flour if gluten-free)
  • 7/8 cup (210ml) water
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano

  • 1/2 monster zucchini (or 2 medium zucchini)
  • 150g breadcrumbs

For the Spicy Mayo (optional):

  • 3 tablespoons vegan mayo (or yogurt)
  • 1 tablespoon sriracha
  • 1 tablespoon vinegar
  • 1 tablespoon agave
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
