Ingredients you'll need

For the Batter:

  • 1 cup (125g) flour
  • 3/4 cup (180ml) water
  • A pinch of salt and pepper

Main Ingredients:

  • 1 broccoli
  • 1 cup (100g) breadcrumbs

For the Sauce:

  • 1/4 cup (60g) peanut butter
  • 1/2 lime
  • 1 tbsp maple syrup or agave
  • 1 tbsp tomato paste
  • 3/4 tsp each salt and chili flakes
  • 1 tsp curry powder
  • 4-5 tbsp water

Let's get cookin'

  1. Mix flour, water, salt, and pepper to make the batter.
  2. Dip the broccoli into the batter and then coat with breadcrumbs
  3. Bake at 180°C/360°F for 25-30 minutes
  4. Stir together all sauce ingredients (peanut butter, lime, maple syrup/agave, tomato paste, salt, chili flakes, curry powder, and water)
  5. Toss the baked broccoli in the sauce. Optionally bake for an additional 7-10 minutes
