Ingredients you'll need

  • 1 broccoli
  • handful green beans
  • vegan chicken or protein (optional)
  • 150g defrosted peas
  • 40g pine nuts
  • salt and pepper
  • generous handful basil and parsley
  • juice of 1 lemon
  • 3-4 tbsp olive oil
  • 1/3 cup (80ml) pasta water
  • 400g pasta
  • vegan parmesan
  • Let's get cookin'

    1. Sauté broccoli, green beans, and optional protein in olive oil
    2. For pesto: blanch peas 2-3mins, blend with nuts, salt, pepper, herbs, lemon juice, olive oil, pasta water until smooth
    3. Cook pasta al dente, add everything with pasta water to veggies
    4. Stir well serve with vegan parmesan.
