Ingredients you'll need

  • 1 onion
  • 4 cloves garlic
  • 3 carrots
  • 2 stalks celery
  • 3 tbsp tomato paste
  • 2 cans white beans (440g total)
  • 750ml-1l water or veg stock
  • handful frozen spinach (optional)
  • 1 tsp each salt dried Italian herbs paprika
  • pepper
  • handful fresh basil (optional)
  • juice of 1/2 lemon
  • 1 heaped tsp vegan pesto
  • bread
  • Let's get cookin'

    1. Chop and sauté onion and garlic
    2. Finely chop carrots and celery, sauté 5mins
    3. Add tomato paste, beans, water, spinach and seasonings
    4. Simmer 15mins
    5. Add basil, lemon juice and pesto simmer 5mins
    6. Serve with bread.
