Ingredients you'll need

  • 1 big onion
  • 5 cloves garlic
  • 1 tsp each turmeric cumin ground coriander
  • big bunch cilantro and parsley
  • bunch chives and scallions
  • 500g frozen spinach
  • 2 cups (500ml) water
  • 1 can (220g) kidney beans
  • 100g soy chunks
  • salt and pepper
  • juice of 3-4 limes
  • saffron rice
  • vegan yogurt
  • Let's get cookin'

    1. Chop and sauté onion and garlic
    2. Add spices, sauté 1-2mins
    3. Finely chop herbs, add to pan fry 5-10mins
    4. Add water, kidney beans, cooked soy chunks, salt, pepper and lime juice
    5. Simmer 45mins
    6. Serve with saffron rice and vegan yogurt.

    Persian herbal stew full of authentic flavors

    Ghormeh Sabzi is one of the most famous Persian dishes and thrives on its intense blend of herbs. This vegan version with soy pieces retains all the traditional flavors. The secret lies in the abundance of fresh herbs: coriander, parsley, chives, and spring onions are finely chopped and sautéed until they develop their full aroma. Turmeric, cumin, and coriander form the spice base, while frozen spinach provides additional green color. The soy pieces are cooked separately in broth and then sautéed, giving them a meat-like texture. Lime juice replaces traditional dried limes and adds the necessary acidity to the dish.
