Ingredients you'll need

  • 1 1/2 cups (190g) flour
  • 1/3 cup (80g) soft vegan butter
  • 3 tbsp water
  • pinch of salt
  • 200g mushrooms sliced
  • 2 leeks sliced
  • 2 tbsp balsamic vinegar
  • 2 tbsp maple syrup
  • 1 tsp dried herbs
  • small splash water
  • vegan cream cheese (optional)
  • vegan cream for brushing
  • Let's get cookin'

    1. Knead dough and refrigerate while preparing filling
    2. Fry mushrooms until golden, season with salt and pepper
    3. Fry leeks until soft, add balsamic vinegar, maple syrup, salt, herbs and water
    4. Cook 10mins until jammy then add mushrooms back
    5. Roll dough on floured parchment into circle
    6. Optional spread with vegan cream cheese
    7. Add filling and fold over edges
    8. Brush with vegan cream and bake at 180C/360F for 35-45mins until golden
    9. Rest 10min before serving.
