Ingredients you'll need

  • 1 tbsp (15g) red curry paste
  • 100ml coconut milk
  • 200ml water
  • 1 tsp light soy sauce
  • juice of 1/2 lime
  • pinch of sugar
  • pinch of salt
  • 70g quick cooking noodles
  • 65g tofu puffs or cubed tofu
  • fresh cilantro and mint
  • crispy onions
  • vegetables
  • Let's get cookin'

    1. Simmer curry paste and coconut milk 3-4mins
    2. Add water, soy sauce, lime juice, sugar and salt
    3. Cook noodles according to package
    4. Add tofu to broth and cook 3-4mins
    5. Assemble in bowl with herbs, crispy onions and vegetables.
