Ingredients you'll need

  • 100g short grain rice
  • 3 TBSP vegan vanilla protein powder
  • cinnamon to taste
  • a pinch of salt
  • 300ml creamy coconut milk
  • 300ml water

To serve:

  • roasted coconut chips
  • coconut yogurt
  • fresh mango

Let's get cookin'

  1. Add all ingredients to a baking dish and mix well.
  2. Bake at 170C for 90mins but stir every now and then.
  3. Serve with the coconut chips, yogurt and mango.


Note: You can keep the rice pudding in the fridge for 3-4 days.
