Ingredients you'll need

For the Pasta:

  • 250g flour
  • A good pinch of salt
  • 125 to 140ml water

For the Sauce:

  • 50g vegan butter
  • 2 large tomatoes, chopped
  • 1/2 tablespoon white wine vinegar or a splash of white wine
  • Salt and pepper to taste
  • Vegan Parmesan for serving

  1. For the pasta: Combine flour and salt in a large bowl.
  2. Gradually add water (start with 125ml and add more if needed) and knead well for 5 minutes until smooth.
  3. Cover the dough and set aside for at least 30 minutes to rest.
  4. Roll out the dough thinly on a floured surface and cut into desired pasta shapes (alternatively, you can skip rolling and cut directly with scissors).
  5. Bring a large pot of salted water to a boil.
  6. Cook the fresh pasta until they float to the top (this indicates they're done).
  7. For the sauce: Heat vegan butter in a large pan over medium heat.
  8. Add the chopped tomatoes and fry for 5-7 minutes until softened and slightly caramelized.
  9. Deglaze the pan with white wine vinegar or white wine.
  10. Season with salt and pepper to taste.
  11. Add the cooked pasta to the sauce along with some pasta cooking water.
  12. Toss well to combine and coat the pasta in the buttery tomato sauce.
  13. Serve immediately with vegan Parmesan on top.
