Ingredients you'll need

For the Tofu:

  • 200g tofu
  • Oil for frying
  • 3 tbsp teriyaki sauce
  • Juice of 1/2 lime
  • Salt to taste

For the Roll Ups:

  • 2 cucumbers, peeled in thin strips
  • 4 tbsp vegan cream cheese
  • 1 avocado, cut in slices
  • A pinch of salt
  • Hot sauce (for serving)
  • Rice (for serving)

Let's get cookin'

  1. Cut tofu into slices and fry on both sides in oil
  2. Glaze the fried tofu with teriyaki sauce, lime juice, and salt, then set aside
  3. Peel cucumbers into thin strips. Lay the cucumber strips on a cutting board. Spread vegan cream cheese on the cucumber strips. Add glazed tofu, avocado slices, and a pinch of salt. Roll up the cucumber strips
  4. Cut into sushi-like pieces. Serve with hot sauce and rice
