- First, cook the rice. Rinse it 2-3 times, then cover it in a pot with 200 ml of water and a pinch of salt and bring to a boil. Once the rice is boiling, reduce the heat to low and simmer for about 20 minutes.
- In the meantime, you can prepare the fillings. Crumble the tofu into separate bowls and mix it with the ingredients. Finally, add a little salt to taste. Peel and wash the cucumber, and slice it thinly.
- When the rice is cooked, stir in the sesame seeds and fluff the rice with a fork.
- Now you can prepare a small bowl of water. Lay a nori sheet on a work surface and layer 2-3 tablespoons of rice, a few cucumber slices, one of the three fillings, and another 2-3 tablespoons of rice in the center.
- Turn the sheet toward you so it forms a diamond shape and fold each corner of the nori sheet, one at a time, into the center over the filling to close the "sandwich." It helps to lightly moisten the ends with water to help them stick together. To serve, you can cut them in half to form triangles, if desired.
