Ingredients you'll need

  • 3 large zucchini or one monster zucchini
  • 2 cloves garlic minced
  • 1/4 cup (60g) tahini
  • salt and pepper
  • juice of 1/2 lemon
  • 1 tsp cumin and 1 tsp of ground coriander
  • Let's get cookin'

    1. Cut zucchini in half and score diagonally.
    2. Fry in pan until slightly burned and soft (takes about 10mins in total, cover or put on smth heavy for best results.)
    3. Mix minced garlic, tahini, salt, pepper, lemon juice, cumin with zucchini.
    4. Blend and you are ready to dip.
    5. Store in fridge for 4-5 days
