Ingredients you'll need

  • 300g mushrooms
  • salt pepper curry powder
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp tomato paste
  • 2 tbsp red curry paste
  • 250g risotto rice
  • 900ml (3 1/2 cups) veg stock
  • 2/3 cup (150ml) coconut milk
  • juice of 1/2 lime
  • pinch of sugar
  • cilantro
  • vegan parmesan
  • Let's get cookin'

    1. Fry mushrooms with weight until water is released, season and remove
    2. Sauté onion and garlic in oil
    3. Add tomato paste and curry paste. Sauté a few more minutes
    4. Toast rice 3-4mins
    5. Gradually add stock stirring until rice is cooked (15-20mins)
    6. Stir in coconut milk, lime juice, sugar and optional cilantro
    7. Serve with mushrooms and vegan parmesan.
