Ingredients you'll need
300g mushrooms
salt pepper curry powder
1 onion chopped
2 cloves garlic minced
1 tbsp tomato paste
2 tbsp red curry paste
250g risotto rice
900ml (3 1/2 cups) veg stock
2/3 cup (150ml) coconut milk
juice of 1/2 lime
pinch of sugar
cilantro
vegan parmesan
Let's get cookin'
Fry mushrooms with weight until water is released, season and remove
Sauté onion and garlic in oil
Add tomato paste and curry paste. Sauté a few more minutes
Toast rice 3-4mins
Gradually add stock stirring until rice is cooked (15-20mins)
Stir in coconut milk, lime juice, sugar and optional cilantro
Serve with mushrooms and vegan parmesan.
