Ingredients you'll need

For the leek mixture

  • 2 cloves garlic
  • 25g vegan butter
  • 3 leeks
  • Pinch of chili flakes

For the sauce

  • 1 heaped tsp light miso paste
  • 1 tbsp tahini
  • Juice and zest of 1 lemon
  • 1/2 tbsp white vinegar
  • 1 tbsp agave
  • 75ml water.

For the pasta

  • 2 servings pasta

For serving: a handful cilantro (optional)

  1. Sauté garlic and chili flakes in vegan butter
  2. Add sliced leeks and stir-fry on medium heat until soft and jammy (about 10 minutes)
  3. Mix miso paste, tahini, lemon juice and zest, vinegar, agave, and water
  4. Add sauce mixture to the pan with leeks
  5. Cook pasta according to package directions
  6. Add cooked pasta to pan with some pasta water and optional cilantro
  7. Stir until pasta is nicely glazed with sauce
