Ingredients you'll need

For the Cabbage:

  • 1 cabbage, cut into quarters
  • Oil for frying
  • Salt to taste

For the Sauce:

  • 75g vegan butter
  • 1 small onion
  • 2 cloves garlic
  • 1 teaspoon mustard
  • 1 teaspoon miso paste
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon chopped parsley
  • 150ml vegan cream
  • Juice of 1/2 lemon
  • 1 teaspoon agave syrup

Let's get cookin'

  1. Preheat oven to 200°C (400°F).
  2. Cut the cabbage into quarters.
  3. Heat oil in a large pan over medium-high heat.
  4. Fry the cabbage quarters on each side until nicely charred (about 5 minutes total).
  5. Season the charred cabbage with salt.
  6. Transfer the cabbage to a baking dish and bake in the oven for 20 minutes.
  7. While the cabbage is baking, prepare the sauce: Dice the onion and mince the garlic.
  8. Melt the vegan butter in a pan and sauté the onion and garlic for a few minutes until softened.
  9. Add the mustard, miso paste, curry powder, dried thyme, dried rosemary, salt, and pepper. Stir well.
  10. Add the chopped parsley, vegan cream, lemon juice, and agave syrup.
  11. Let the sauce simmer for a few minutes until slightly thickened.
  12. Remove the cabbage from the oven and serve with the creamy herb sauce drizzled over top.
