Ingredients you'll need

For the Zucchini Pasta:

  • 750g zucchini (about 1 large zucchini)
  • 250g flour (start with 200g, add more if needed)
  • A good pinch of salt
  • Oil for frying

For the Zucchini Pesto:

  • Remaining cooked zucchini (from above)
  • A handful of pine nuts
  • A good handful of fresh basil
  • A glug of olive oil
  • Salt and pepper to taste

Let's get cookin'

  1. Chop the zucchini and fry in some oil until softened.
  2. Add about half of the cooked zucchini to a food processor. Add 200g flour and a good pinch of salt to the food processor with the zucchini.
  3. Blend until it forms a dough, adding more flour if needed to achieve the right consistency. Cover the dough and set aside while making the pesto.
  4. For the pesto: Add the remaining cooked zucchini, pine nuts, basil, and olive oil to the food processor. Blend until smooth and season with salt and pepper to taste.
  5. Bring a large pot of water to a boil.
  6. Using scissors, cut the pasta dough directly into the boiling water.
  7. Cook until the pasta floats to the top (this indicates it's done).
  8. Remove the pasta from the water and mix with the zucchini pesto.
