Ingredients you'll need

For the Yogurt Sauce:

  • 120g vegan unsweetened yogurt
  • 1 tablespoon lemon juice or vinegar
  • Salt to taste
  • 1/2 teaspoon dried mint

For the Döner "Meat":

  • 1 eggplant, cut into thin slices
  • 45g soy chunks (or 150g firm tofu, sliced)
  • Vegetable stock for cooking
  • Oil for frying
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon dried oregano
  • Salt to taste

For Garnish:

  • Chili oil
  • Pine nuts

Let's get cookin'

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. For the yogurt sauce: Stir together vegan yogurt, lemon juice, salt, and dried mint until well combined. Set aside.
  3. Cook the soy chunks in vegetable stock for about 5 minutes, then drain.
  4. Heat oil in a large pan and add the sliced eggplant and cooked soy chunks (or tofu slices).
  5. Stir-fry for 5-10 minutes until the eggplant has softened.
  6. Add paprika, cumin, ground coriander, cinnamon, dried oregano, and salt to the pan.
  7. Season and stir well to coat everything in the spices.
  8. To serve: Place the cooked pasta in bowls, top with the yogurt sauce and döner "meat."
  9. Garnish with chili oil and pine nuts before serving.
