Pad krapow is a popular dish from Thailand and this version with tofu is absolutely delicious!

Ingredients you'll need

  • 400g tempeh, torn into chunks
  • 1 chili, chopped
  • 4 cloves garlic, chopped
  • Few tbsp oil for frying
  • 1 tbsp sweet soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • Pinch of sugar
  • Bunch of Thai basil or holy basil (or regular basil if unavailable)
  • Handful of green beans, chopped
  • Cooked rice for serving
  • Let's get cookin'

    1. Tear tempeh into bite-sized chunks.
    2. Chop chili and garlic into a chunky paste (or blend briefly).
    3. Fry the chili-garlic paste in oil for 2-3 minutes until fragrant.
    4. Add tempeh chunks and continue frying until golden.
    5. Mix all three soy sauces with a pinch of sugar and add to the pan.
    6. Add Thai basil and chopped green beans.
    7. Stir-fry for a couple more minutes until beans are tender.
    8. Serve immediately over rice.
