Ingredients you'll need

  • 150g quick-cooking noodles
  • 1 large carrot, chopped
  • 200g sugar snap peas (or frozen veggie mix)
  • 1 thumb-sized piece ginger, chopped
  • 2 cloves garlic, minced
  • 2 tsp gochujang or red curry paste
  • 2 tsp maple syrup or agave syrup
  • 2 tbsp peanut butter
  • 2 tsp lime juice
  • 2 tbsp soy sauce
  • 750ml water
  • Salt to taste
  • For serving

    • Fresh cilantro
    • Lime wedges
    • Protein of choice

    Let's get cookin'

    1. Add all ingredients (noodles, vegetables, aromatics, seasonings, peanut butter, and water) to a large pot.
    2. Cover and bring to a simmer.
    3. Cook for 5 minutes or until noodles are cooked through and vegetables are tender.
    4. Taste and adjust seasoning with salt as needed.
    5. Serve hot with fresh cilantro, lime wedges, and your choice of protein side.
