Ingredients you'll need

  • 1 can (220g) cooked chickpeas, drained
  • 1/2 red onion, finely chopped
  • 3 small pickles, chopped
  • 1/2 bunch fresh dill, chopped
  • 3 tbsp vegan mayo
  • Juice of half a lemon
  • 1 tsp mustard
  • Salt and pepper to taste
  • Let's get cookin'

    1. Drain chickpeas and mash them in a bowl, leaving some texture.
    2. Add chopped red onion, pickles, and dill to the mashed chickpeas.
    3. Mix in vegan mayo, lemon juice, and mustard.
    4. Mash and mix everything together until well combined.
    5. Season with salt and pepper to taste.
    6. Serve with sandwich toppings of your choice.
    7. Store in refrigerator for up to 3 days.
