Ingredients you'll need

  • 200g red lentils, rinsed
  • 500ml water
  • A pinch of salt
  • 85g fine bulgur
  • 1 onion
  • 2 cloves garlic
  • Olive oil for sautéing
  • 2 tbsp pepper paste
  • 1 tsp cumin
  • 1 tsp red pepper flakes
  • 1/2 bunch parsley, chopped
  • Salt and pepper to taste
  • 1 tbsp lemon juice or pomegranate molasses
  • Lettuce (for serving)
  • Fresh lemon juice (for serving)

Let's get cookin'

  1. Add red lentils, water, and salt to a pot and cook for 10 minutes or until soft. Remove the pot from heat, stir in the fine bulgur and cover for another 15 minutes
  2. Sauté onion and garlic in olive oil. Add pepper paste, cumin, and red pepper flakes to the pan, stir well and set aside.
  3. Add the spice paste to the lentil-bulgur mixture. Add chopped parsley, salt and pepper to taste, and lemon juice or pomegranate molasses. Knead well and shape into köfte
  4. Serve with lettuce and fresh lemon juice
