Ingredients you'll need

  • 100g veggies of choice (eggplant)
  • 100g tofu or chickpeas cut in cubes
  • 1 tsp oil
  • 1 tsp paprika
  • 1/2 tsp dried herbs
  • 55g orzo/risoni
  • 1 tbsp tahini
  • 1/2 tbsp maple syrup
  • juice of 1/2 small lime
  • salt
  • sriracha (optional)
  • sun dried tomatoes
  • cilantro
  • vegan feta
  • Let's get cookin'

    1. Mix veggies and tofu/chickpeas with oil, paprika, herbs
    2. Air fry bake at 200C/400F for 12-15min or pan fry 12-15min medium heat
    3. Cook orzo in salted water 12mins
    4. For sauce: mix tahini, maple syrup, lime juice, salt, optional: sriracha
    5. Assemble with optional add-ins: sun dried tomatoes, cilantro, vegan feta
    6. Can meal prep and store in fridge up to 3 days.
