Ingredients you'll need

For the soy mixture

  • 1 onion
  • 2 cloves garlic
  • 1 red pepper
  • 75g soy chunks
  • 1 tbsp soy sauce
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili
  • Salt to taste
  • 2 tbsp tomato paste
  • 250g tomato sauce
  • Handful parsley
  • 1 tbsp pomegranate molasses (optional).

For the garlic sauce

  • 200g unsweetened vegan yogurt
  • 1/2 tbsp vinegar
  • Salt to taste
  • 1 tsp garlic powder
  • 1 tsp dried mint

For assembly

  • 4 tortillas

Let's get cookin'

  1. Chop onion, garlic, and red pepper
  2. Sauté for a few minutes
  3. Add soy chunks and soy sauce, cover with water and cook 5-10 minutes until soft
  4. Add spices, tomato paste, tomato sauce, parsley, and optional pomegranate molasses
  5. Simmer on medium heat for 10 minutes
  6. Mix all garlic sauce ingredients
  7. Fold tortillas in half twice, dip edges in sauce
  8. Layer tortillas and sauce, top with garlic yogurt
  9. Afiyet olsun!
