Ingredients you'll need

  • 1 small cucumber
  • 1/2 carrot
  • 3 tbsp each vinegar sugar water
  • salt
  • 100g tofu
  • 2 tsp hoisin sauce
  • 2 tsp soy sauce
  • 1/2 tsp ginger powder
  • 1/2-1 tbsp flour (optional)
  • 1 tortilla
  • fresh cilantro and mint
  • sriracha
  • vegan mayo
  • Let's get cookin'

    1. Cut cucumber and carrot in slices/julienne
    2. Bring vinegar, sugar, water and salt to boil. Add to vegetables and refrigerate
    3. Mix tofu with hoisin, soy sauce, ginger powder and flour, if needed
    4. Press mixture on tortilla and fry 2-3mins each side
    5. Add pickles herbs and sauces to wrap roll and enjoy.
