Ingredients you'll need

  • 150 g Quinoa
  • 75 g maple syrup or agave nectar
  • 50 g peanut butter
  • 20 g flour
  • 40 g dates, chopped
  • 1 pinch of salt
  • 1 tbsp ground cinnamon
  • 1 handful of chocolate chips as topping

Let's get cookin'

  1. First, we need to cook the quinoa. Place it in a pot with 300 ml of water and simmer for 20-25 minutes with the lid slightly open until the water has evaporated.
  2. Place the cooked quinoa into a large bowl and add the remaining ingredients (except the chocolate chips). Mix well until a sticky dough forms.
  3. Now preheat the oven to 180°C (top and bottom heat) and line a 15 × 20 cm baking pan with baking paper. Press the dough into the pan, decorate it with some chocolate chips, and then bake for 30 minutes.
  4. Afterwards, you should let the “quinoa cake” cool completely before cutting it into 8 equal-sized bars.
  5. You can easily store the bars in a box in the fridge; they will keep there all week.
