Ingredients you'll need

  • 75g silken tofu
  • 25ml water
  • 1/2 tsp baking powder
  • 25g flour
  • Pinch of salt
  • For the filling

    • 2 spring onions, green parts only, chopped
    • 100g pointed cabbage, chopped (or other vegetables from your fridge)

    For toppings

    • BBQ sauce
    • Vegan mayo
    • Fresh cilantro
    • Fried onions
    • Other toppings of choice

    Let's get cookin'

    1. Mix silken tofu and water with a fork until combined.
    2. Add baking powder, flour, and salt. Mix well to form a batter.
    3. Fold in chopped spring onions and cabbage.
    4. Heat oil in a pan and spread the mixture evenly.
    5. Cover and fry for 5 minutes.
    6. Flip the pancake and fry covered for another 5 minutes.
    7. Top with BBQ sauce, vegan mayo, cilantro, fried onions, and any other desired toppings.
    8. Serve immediately and enjoy!
