Ingredients you'll need

For the Cream:

  • 400g silken tofu
  • 200g vegan yogurt
  • 2 tbsp vanilla instant pudding or corn starch
  • 3 tbsp sugar

Other Ingredients:

  • 125g vegan cookies
  • 1 mango, cut in slices

For the Mango Fruit Topping:

  • 200g mango (defrosted mango can be used)
  • 1 tbsp sugar
  • Juice of 1/2 lime

Let's get cookin'

  1. Whisk silken tofu, vegan yogurt, vanilla instant pudding/corn starch, and sugar until smooth. Heat the mixture while stirring for about 5 minutes, then set aside
  2. Cut 1 mango into slices
  3. For the fruit topping: blend 200g mango, sugar, and lime juice until smooth. Pass the blended mango mixture through a sieve
  4. Layer the cookies, cream, and mango slices
  5. Finish with the mango fruit topping. Chill in the fridge for at least 2.5 hours
