Ingredients you'll need

  • 600g flour
  • 15g salt
  • 15g sugar
  • 300ml lukewarm water
  • 20g fresh yeast
  • 60g vegan butter

For the Baking Soda Bath:

  • 2 liters water
  • 100g baking soda

Let's get cookin'

  1. In a large bowl, mix together flour, salt, and sugar. Make a well in the center.
  2. In the well, combine the lukewarm water, fresh yeast, and vegan butter.
  3. Gradually stir the flour mixture into the liquid until combined.
  4. Knead the dough until it becomes soft and smooth.
  5. Let the dough rest for 1 hour in a covered bowl.
  6. After resting, divide the dough into 10 equal pieces.
  7. Shape each piece into sticks, traditional pretzels, or buns as desired.
  8. Bring 2 liters of water to a light boil and add the baking soda.
  9. Carefully cook each dough piece in the baking soda water for 1 minute, turning after 30 seconds.
  10. Transfer the boiled pretzels to a lined baking tray.
  11. Preheat oven to 180°C (350°F).
  12. Bake for 20 minutes until golden brown and cooked through.
  13. Serve warm or let cool completely before storing.
