Ingredients you'll need
1 cup rice
1 1/2 cups coconut milk or water
salt
1 head broccoli
2 tbsp teriyaki sauce
2 blocks (400g) firm tofu
oil and salt
thumbsize piece ginger
2 cloves garlic
3 tbsp teriyaki sauce
3 tbsp soy sauce
1 tbsp agave
2 tsp vinegar
water
1 tsp each ground coriander and paprika
1/4 tsp cinnamon and pepper
Let's get cookin'
Cook rice in coconut milk with salt, simmer 20mins
Cut broccoli in florets sauté and toss with teriyaki
Shred tofu on baking tray with oil and salt bake at 200C/400F for 20mins
Fry ginger and garlic add teriyaki, soy sauce, agave, vinegar, water and spices
Let bubble. Stir in baked tofu and cook 5-10mins
Serve on rice with broccoli.
