Ingredients you'll need

For the dough:

  • 3 cups (378g) + 1 tablespoon all-purpose flour, divided (plus more for flouring surface)
  • 1 packet (8g) instant yeast
  • 1/3 cup (70g) sugar
  • 1 cup (240ml) dairy-free milk, unsweetened
  • 1/4 cup (60g) vegan yogurt or apple sauce
  • 1/4 cup (40g) vegan butter

For the filling:

  • 1/3 cup (80g) vegan butter, softened
  • 2 tablespoons ground cinnamon
  • 1/2 cup (100g) brown sugar

Let's get cookin'

  1. In a large mixing bowl, combine 3 cups flour, instant yeast, and sugar. Warm the dairy-free milk slightly (it should be lukewarm, not hot). Add the warm milk, vegan yogurt (or apple sauce), and melted vegan butter to the dry ingredients.
  2. Mix until combined, then knead for 8-10 minutes until you have a soft, elastic dough. Add the extra tablespoon of flour if the dough is too sticky. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rest in a warm place for 1-2 hours until doubled in size.
  3. While the dough rises, prepare the filling: In a bowl, cream together the softened vegan butter, ground cinnamon, and brown sugar until well combined and spreadable.
  4. Once the dough has risen, punch it down and roll it out on a well-floured surface into a large rectangle. Spread the cinnamon-sugar filling evenly over the entire surface of the dough. Cut the dough into 6 long strips in the direction of the long side of the rectangle.
  5. Take one strip and roll it up tightly like a traditional cinnamon roll. Place this rolled strip at the end of the second strip, then roll both together.
  6. Continue this process with each remaining strip, rolling the growing cinnamon roll onto the next strip until all 6 strips are combined into one giant spiral.
  7. Place the giant cinnamon roll in a greased baking dish. Preheat oven to 175°C (350°F).
  8. Bake for 35-40 minutes until golden brown and cooked through. The top should be deeply golden and spring back when gently pressed.
  9. Let cool for 10-15 minutes before serving. Optionally, drizzle with icing or cream cheese frosting.
