Ingredients you'll need

Spice Mix

  • ½ tsp ground coriander
  • ½ tsp salt
  • ½ tsp smoked paprika

Cauliflower Wings

  • 1 cup (130 g) flour
  • 1 cup (250 ml) water
  • Spice mix (see above)
  • 1 cup (100 g) breadcrumbs
  • 1 head cauliflower, cut into florets
  • Oil spray or brush for baking

Sauce

  • ½ cup vegan mayonnaise
  • ¼ cup sweet chili sauce
  • 4 tsp sriracha

Let's get cookin'

  1. Preheat the oven to 180°C / 360°F and line a baking tray with parchment paper.
  2. In a large bowl, combine the flour, water, and spice mix. Whisk until you get a smooth, loose batter.
  3. Place the breadcrumbs in a separate bowl.
  4. Dip each cauliflower floret first into the batter, then coat evenly with breadcrumbs.
  5. Arrange the coated florets on the prepared baking tray. Lightly spray or brush with oil.
  6. Bake for 25 minutes, until crispy and golden, turning once halfway through if desired.
  7. Meanwhile, mix the vegan mayo, sweet chili sauce, and sriracha in a bowl.
  8. Once baked, toss the hot cauliflower wings in the sauce until evenly coated. Serve immediately and enjoy.
