Ingredients you'll need

  • 400g firm tofu
  • 2 tbsp corn starch
  • salt and pepper
  • 1 tbsp oil
  • 1 onion
  • 2 cloves garlic
  • thumbsize piece ginger
  • 2 tsp each ground coriander cumin garam masala
  • 1/2 tsp chili powder
  • 2 1/2 cups (625ml) tomato passata
  • 1 cup (250ml) coconut milk
  • squeeze of lemon
  • 1 tsp sugar
  • salt
  • 1 cucumber
  • 1 tbsp each vinegar soy sauce agave
  • 1/2 tsp each garlic powder chili flakes
  • Let's get cookin'

    1. Pat tofu dry, mix with cornstarch, salt, pepper, oil. Bake at 200°C for 15mins
    2. Fry onion garlic ginger, add spices, fry a few minutes
    3. Add tomato passata, simmer 5-10mins then blend
    4. Add coconut milk, lemon juice, sugar, salt with tofu. Stir. Serve with rice or naan
    5. For cucumber salad: mix smashed chopped cucumber with vinegar, soy sauce, agave, garlic powder, chili flakes.
